I want to share one of the best salsa verde recipes I have come across thanks to a good Mexican friend who shared her secrets with me. This salsa de tomatillo tatemada, which essentially means charred tomato sauce recipe delivers tangy, charred flavors with a kick of heat. It’s surprisingly easy to make at home, perfect for any size gathering.

Salsa Verde Tatemada – An Irresistible Blend of Ingredients

The key to amazing salsa verde is charring the vegetables to intensify their flavors. You can do it with a good skillet. I use my outdoors Camp Chef griddle which works like a charm. This recipe calls for charring:

  • Fresh tomatillos – With their papery husks removed, these turn sweet and smoky
  • Garlic – Roasted garlic adds rich, mellow notes
  • White Onion, quartered – Charred onion lends savory, and sweet depth
  • Serrano chiles – Adjust the number to your desired spiciness; charring tames their heat
  • Cilantro – Fresh, bright cilantro cools down the chiles

Once charred, you’ll peel the garlic and remove the chile seeds (unless you want more heat). Throw everything in the blender with salt and pepper until it reaches your ideal chunky or smooth consistency.

Tweak It for Any Occasion

This versatile salsa comes together in minutes but tastes like it simmered for hours. It makes enough for a crowd but is easy to adjust.

  • For a smaller gathering, cut the recipe in half.
  • To turn up the heat, add more Serranos or spice with jalapeños or habaneros.
  • Omit the chiles completely for a mild, family-friendly salsa.
  • Thin it with a splash of water if you prefer a thinner consistency for dipping.

Ingredients

  • 14 14 tomatillos

  • 1/2 1/2 Garlic head

  • 1 1 Medium onion

  • 8 8 Serrano chiles

  • 1 1 Cilantro bunch

  • Salt and pepper to taste

Directions

  • Heat a skillet or griddle and add the tomatillos, onion cut in quarters, chiles, and unpeeled garlic char all the ingredients on each side (about 8 to 10 minutes per side). Keep an eye on the garlic as you may have to remove it earlier. You should be ready when the skin is charred but everything is soft and cooked on the inside.
  • Once cool take the skin off the garlic. You’ll also need to take the seeds out of the chiles unless you want it to be extra hot.
  • Put all ingredients in a blender or food processor and add the salt, pepper and cilantro. Blend until you obtain the desired consistency. You can make a chunky salsa or blend if for longer and have a creamier one. You can add water if you feel that the salsa is too thick.

Notes

  • You can adjust the number of serrano peppers depending on how hot you want your salsa.
