This easy Korean barbecue marinade infuses the pork belly with a savory umami flavor is a variation over the traditional no-marinade Korean Samgyupsal. The combination of soy sauce, ginger, sesame oil, and honey works to tenderize the meat while adding a nice sweetness. For best results, let the pork marinate for at least 2 hours. Leaving it in the fridge overnight allows the marinade to penetrate the meat, but 2 hours should suffice.

Ingredients

  • 2 lbs 2 Pork belly

  • 1/3 cup 1/3 Soy sauce

  • 1/3 cup 1/3 Sesame oil

  • 1 inch 1 Grated fresh ginger

  • 3 3 Garlic cloves minced

  • 1 Tbsp 1 Honey or Agave syrup

  • 1/2 cup 1/2 Water (if necessary to cover the pork)

Directions

  • Request your butcher to slice the pork belly to about 1/4 – 1/2 of an inch (0.6 – 1.3 cm) thick. Alternatively you can slice the pork belly yourself.
  • Mince the garlic and grate the ginger
  • Mix the soy sauce, sesame oil, grated ginger, minced garlic, and honey in a bowl, add the pork, and make sure that the marinade covers all the pork. You can add some water as necessary to make sure that the liquid marinade covers all of the pork. Cover the bowl and container and keep in the fridge until ready to cook.   • You can use a cast iron skillet if indoors. Otherwise if you want to cook outdoors you can grill the pork belly on a hot charcoal or gas grill. Add salt and pepper to taste to the pork belly slices and cook 2 to 3 minutes on each side or until crispy.
  • Serve while warm with banchan, sesame dipping sauce, or any other of your favorite sauces.

Notes

  • Pro tip: Place the pork belly slices and marinade in a zip-top bag to maximize contact and prevent leakage before refrigerating. Then grill or pan-sear as usual for ultra-flavorful, tender samgyupsal every time.
