“Tricolore” Caprese Pasta Salad

Ingredients
2 pints 2 Grape tomatoes
1 cup 1 Chopped basil
14 oz 14 Fresh Mozzarella
1 lb 1 Pasta
3 tbsp 3 Non-pareil capers
3 tbsp 3 Olive oil
Salt and pepper to taste
Directions
- Cook the pasta according to the package instructions until it’s al dente. You can strain it even 1 or 2 minutes before it is al dente as you will continue cooking itself after draining. Remember to salt the pasta water generously for added flavor.
- While the pasta is cooking, prepare the dressing. In a small bowl, combine the olive oil and capers. These ingredients will add a briny and savory dimension to our dish.
- Once the pasta is cooked, drain it, add a bit of olive oil, mix to prevent it from sticking, and let it cool for a few minutes.
- Cut the grape tomatoes in half, chop the basil and the fresh mozzarella cheese and set aside.
