This creamy chipotle sauce is made with dried chipotles. You have to soak them in water before you can use them. I also use plain Greek yogurt, garlic, and lime juice. In reality, Chipotles are smoked dried Jalapeño peppers. You can use canned chipotles in adobo for this recipe, but the flavor profile will be a bit different as they include tomato paste and other ingredients. I favor Yogurt based sauces as I’m not a fan of mayonnaise or any mayo based sauces. I think mayo has a place in certain dishes but its usage in my kitchen is usually very limited. This is one of my favorite “spicy mayo” type saice that goes very well with seafood based tacos.
