Ingredients
2 lb 907.18 g Baby gold potatoes
Salt and Pepper to taste
- Greek Dressing
4 4 Garlic cloves – minced
4 tbsp 59.15 ml Olive oil
1 tbsp 1 tbsp Wine vinegar
1 1/2 1 1/2 Lemon’s juice
2 2 Rosemary sprigs
4 4 Mint leaves
Salt and pepper to taste
Directions
- Let’s Get Cooking! To begin, gather all the ingredients listed above. These baby gold potatoes are perfect for our Greek-style creation. Now, let’s jump right in!
- Cut the potatoes in quarters for an even cooking experience.
- Prepare the Greek Dressing to Infuse the Mediterranean Flavors: In a bowl, or blender combine the minced garlic, olive oil, wine vinegar, and lemon juice. Feel free to adjust the quantities to suit your taste. Add the fragrant rosemary and mint for a fresh twist. These herbs will add a delightful aroma to your potatoes.
- Soak Up the Goodness: Place the baby gold potatoes in a large mixing bowl and pour about half of the Mediterranean marinade over them. Gently toss the potatoes, ensuring they are coated evenly in the flavorsome dressing.
- Choose Your Cooking Method: Don’t worry if you don’t have an outdoor griddle. A trusty stove-top cast iron skillet will work just as well. Pick the method that suits you best and get ready to enjoy perfectly cooked potatoes.
- Time to Sizzle: Heat your griddle or skillet over medium-high heat. Before pouring the potatoes, add a drizzle of olive oil to help the cooking process and prevent sticking. Carefully place the marinated potatoes in a single layer on the heated surface. Sprinkle them with a pinch of salt and pepper to enhance their flavors.
- Flip and Crisp: Allow the potatoes to cook undisturbed for about 3-5 minutes until the bottoms turn golden brown and crispy. Then, gently flip them over with a spatula to ensure even browning on all sides, add the rest of the greek dressing. Lower the heat and continue cooking for an additional 5-7 minutes until the potatoes are fork-tender and perfectly crisp. A basting cover is a great option to help the cooking process in this last cooking stage.
- The Finishing Touch: Remove the Greek-style potatoes from the heat and transfer them to a serving dish. It’s almost time to enjoy!
- Dive In! These crispy Greek-style potatoes are the perfect side dish for your steak. I recommend it with high-quality cuts such as dry-aged rib eye steak. Their savory taste, infused with aromatic herbs, pairs beautifully with the rich flavors of the steak. Gather your loved ones around the table and savor the delicious combination.
