So, if you have a wood pellet smoker handy, and want an enticing smoky flavor, place the marinated lamb leg on a pellet smoker at the same temperature as the oven. This additional step adds depth to the overall taste and aroma. I usually use hickory, apple, or BBQ blend for lamb.
If you have a charcoal grill you can also prepare it, add your favorite smoking wood, and control temperature to achieve the same results. Hickory and oak work well on lamb, you can also use apple wood if you prefer a milder smoky flavor.
