Ingredients

  • 5 lbs 5 Boneless lamb leg

  • 2/3 cup 2/3 Rosemary (approximately 3 sprigs)

  • 2/3 cup 2/3 Mint

  • 3 tbsp 3 Olive oil

  • 4 4 Minced garlic cloves

  • 1 1 Juice of 1 lemon

  • Salt and pepper to taste

Directions

  • Prepare the Lamb: Preheat your oven to 325°F (163°C) for even cooking. Alternatively, you can use a pellet smoker at the same temperature to infuse a delicious smoky flavor into the lamb.
  • Pat dry the boneless lamb leg with paper towels to remove excess moisture. Place the lamb in a roasting pan, positioning the fat side up to enhance juiciness.
  • Create the Herb Marinade: Combine the chopped rosemary, mint, minced garlic, olive oil, lemon juice, and a pinch of salt and pepper in a bowl. Stir well to create a flavorful marinade. Pour the marinade over the lamb, ensuring it is coated evenly.
  • Allow the Flavors to Marinate: Let the lamb marinate for at least 30 minutes. For a more pronounced flavor, refrigerate it overnight. This step allows the herbs and spices to permeate the meat, resulting in a rich Mediterranean taste.
  • Roast the Lamb: Transfer the lamb to the preheated oven or pellet smoker. Roast it for about 2 hours or until the internal temperature reaches 140°F (60°C) for a medium-rare doneness. Adjust the cooking time if you prefer a more well-done lamb.
  • Rest and Serve: Remove the lamb from the oven or smoker when it reaches your desired doneness. Allow it to rest for approximately 15 minutes, ensuring tender and juicy results. Carve the lamb into thin slices, showcasing the beautiful pink center, and serve.

Enhance the Flavor with a Smoky Twist

The original recipe is oven roasted. However, I’ve experimented with the recipe and found out that roasting it in a wood pellet smoker can be a game changer. So, if you have a wood pellet smoker handy, and want an enticing smoky flavor, place the marinated lamb leg on a pellet smoker at the same temperature as the oven. This additional step adds depth to the overall taste and aroma. I usually use hickory, apple, or BBQ blend for lamb.

If you have a charcoal grill you can also prepare it, add your favorite smoking wood, and control temperature to achieve the same results. Hickory and oak work well on lamb, you can also use apple wood if you prefer a milder smoky flavor.
